Flourless Chunky Monkey Blender Muffins

  • 1 cupPeanut butter [1]
  • 2Medium bananas, mashed
  • 2Large eggs
  • 1/4 cupHoney [2]
  • 1/2 cupBaking stevia [3]
  • 1/4 cupUnsweetened cocoa powder
  • 1/4 cupProtein powder [4]
  • 1/2 tspBaking soda
  • 1/2 tspBaking powder
  • 1/4Salt
  • Optional:1/4 cup chocolate chips
  • [1] or almond butter
  • [2] or low sugar maple syrup
  • [3] or 1 cup sweetener that measures like sugar
  • [4] or additional cocoa powder

Preheat your oven to 350 degrees. Spray a 12 cup muffin tin with cooking spray, or line with parchment or silicone liners.

Place everything in a blender and blend until everything is well combined and smooth, (or you could mix everything together in a bowl, using an electric beater). Divide mixture between 12 muffin tins. Bake for 15 minutes, or until a toothpick comes out clean.
